The Pie Queen of BG visits Hart County’s Dennison’s Roadside Market
Here’s a glimpse of what Dennison’s Roadside Market in Horse Cave, KY has to offer… I feel like I could find something new every loop I made through the store. It’s not just veggies and canned goods, you can also shop your heart out. I personally think you should grab a basket and fill it up for someone special. Bonus: they have an awesome playground and host food trucks often!
After snagging some candied jalapenos and the tiniest sweet cherry tomatoes from Dennison’s Market, I knew exactly what I wanted to make. You have to try this.
Pimento Cheese Galette:
Crust:
1 ½ cup ap flour
Pinch of salt
4 TBSP lard
Crumble with hands and slowly add in ice water a little at a time until combined
Approximately ¼ – ½ cup
Roll out on a floured surface to about 2 inches wider than a pie plate
Filling: Pimento cheese
1 lb shredded Colby Jack mixed with sharp cheddar
2 TBSP softened cream cheese
4oz diced pimentos rinsed and drained
Salt & pepper to taste
4 oz diced candied jalapenos
Topping:
3 slices cooked bacon
20 cherry tomatoes sliced and dried on a paper towel
Layer the filling in the milled of the dough leaving room to fold over the edges. Pimento cheese first then top with the tomatoes and bacon
Egg wash the edges of the crust and bake 375 degrees for 30-35 min until browned on the edges and on the bottom.
Let cool for at least 5 minutes if you can resist! To let thigs set so you can slice and serve.

She and her husband, Brad, purchased Alvaton’s Boyce General Store in 2012, giving Brie a place to live out her passion of baking. They transformed the small grocery and deli into a restaurant that served burgers, attracting locals, tourists, farmers and business professionals until October 2020 when Brie pivoted and went to solely making pies and now in 2024 moved out of Boyce and went completely mobile with the Pie Wagon!

While Brie is a small business owner, most importantly, she is a mother and wife, always finding time for her family.
